Lobster Quesadilla

Easy to prepare and serve, as an appetizer for party guests, or a simple meal.


Medium to large flour tortillas, lobster spread (thawed), olive oil, garlic salt, chili powder or cayenne pepper, salsa, sour cream.


1. Heat a skillet to medium high heat. Spray the bottom of the pan with an olive oil spray (a healthier alternative to a heavy oil for coating the pan).
2. Use a spoon or spatula and spread thin (1/8"–1/4") layer of lobster spread all over one side of one tortilla. Place a second tortilla on top of lobster spread to create a “sandwich.”
3. Place the quesadilla into skillet and grill until the tortilla is golden brown, then flip the tortilla over and cook the other side. (Be sure to spray with olive oil again.)
4. Remove the quesadilla from pan, sprinkle with garlic salt, chili powder or cayenne pepper for taste. Serve with a side of salsa and/or sour cream.
